Local Ingredients with an Italian Spin

Italian food is infamous for being rich in texture and flavour, divine in taste and creating a sense of fullness without feeling too heavy. Whether it is pizza, pasta, or a cut of meat, gourmet Italian food has always been the first choice when one thinks of luxury dining. Under the supervision of Two-Star Michelin Chef, Oliver Glowig, and headed by Chef Alfonso Ferraioli, the Primavera kitchen has created a new menu which offers guests the finest of traditional Italian food that truly represents the taste of Italy.

Co-creating the menu especially for the restaurant in Bahrain, the chefs have stayed true to their Italian roots, it features a number of Chef Glowig’s signature dishes. Local products have been incorporated with Italian cooking techniques to create the appetising menu. Ensuring guests get a complete Italian dining experience, the interior of the restaurant has been designed using a minimalist approach. The overall dim lightning and burst of light above each table lets the guests feel a sense of privacy without being too secluded. Italian music plays in the background while the guests dine from handmade Italian plates. Primavera follows the aesthetic of trattoria moderna making it traditional with a touch of modernity. Guests can even witness Chef Alfonso Ferraioli and his team in action through the glass window between the restaurant and the kitchen. The overall ambiance in Primavera guarantees the feel of dining in Italy, in Bahrain.

The Menu:

With a variety to choose from, the menu offers something for everyone from the starters to the desserts. Whether it’s vegetarian, meat or seafood, Primavera’s tantalising selection can accommodate everyone looking for a rich Italian culinary affair.

The meal starts in the true Italian way: two varieties of homemade Focaccia bread (sun dried tomato and rosemary) are served as well as oven-baked sliced bread, crunchy Grissini sticks accompanied with a ricotta cheese and cream sauce, and fresh cut vegetables served on ice. The soft and lightweight bread is delicious from the first bite to the last as the flavours lull on. The versatile ricotta and cream sauce works perfectly well with the vegetables and the Grissini sticks, creating a crispy and creamy mixture with each bite.

The Amuse Bouche

A “Pizzetta”, akin to a small Margherita pizza but instead of being baked, it is fried. The bite-sized pizzetta is airy and fluffy with the right amount of crunch on the crust. Served with tomato sauce, basil and cheese, it has a wholesome zesty flavour.

Antipasti – The Starters

The starters range from small to generous servings. The bite-sized options include dishes such as the Fried Arancini or the Parmigiana, which is a combination of fried items, made from fried zucchini, aubergine and cauliflower. It is served with a traditional pomodoro sauce, which adds a tangy and refreshing taste. Crispy on the outside and melts-in-your-mouth soft on the inside, both of these South Italian dishes are small but flavourful and light, making it easier to devour them all without feeling too guilty.

There is a selection of starters for the seafood lovers as well such as the Polpo alla griglia con insalata di patate, fagiolini e pesto, a grilled octopus salad served with potato slices and pesto. The succulent octopus is best enjoyed with these accompaniments as the flavours of each complement others well. Chef Oliver Glowig’s signature Tuna Carpaccio is also one of the best-selling cold starters, served with mixed pasta, edible Pensee flower and homemade basil ice cream. The combined components of the Tuna Carpaccio make it a very palatable dish and a favourable Antipasti.

A special item, not on the menu, is the Burrata Cheese. The rich-tasting and soft cheese is specially imported from Italy and is served with local cherry tomatoes and olive oil. Sold as street food on the beaches of Puglia, Italy, the cheese is similar to buffalo mozzarella (which is used in the Caprese Salad) but is creamier and softer.

Piatto Principale – Mains

The expansive selections of mains bring to life the Italian cuisine. Chef Glowig and Chef Ferraioli have created mouthwatering options for the diners so they can get a taste of authentic Italian food. A signature of Chef Glowig, the Linguini Pesto with Parmesan cheese and pine nuts is a delight to eat. The fresh-tasting, homemade pesto covering the al dente linguini strands creates an indulgent dish with the pine nuts adding a crunch. Additionally, most of the pastas are made in-house, such as the ones used for Scialatielli Pasta (seafood pasta) and for the stuffed ravioli.

A classic Italian dish, the Tomato Risotto is served with soft Burrata cheese and pieces of anchovies as garnish. Another one of Chef’s Glowig’s signature dishes, the risotto is cooked to perfection with tomato and cheese creating a tantalising flavour. Primavera also offers its diners a roasted chicken dish for the chicken-lovers. Pollo rosmarino e limone con peperoni, olive e caperi is an oven-roasted chicken served with sautéed vegetables. The juicy chicken served with vegetables is the perfect mix as they add relish to the chicken. Additionally, the crispy skin atop the tender chicken completes this savoury dish.

The meat enthusiasts are in for a real treat as the restaurant has prepared the Beef Fillet dish which combines a flavorful beef fillet on sautéed spinach, topped with foie gras and black truffle with a side-order of truffle fries. The entire plate is packed with flavour and the accompaniment of demi-glace sauce and pine nuts further adds to the lush-tasting dish. The truffle fries are something special too as they are made in truffle oil, giving them a nutty taste. Of the more unique dishes made at the restaurant is the Salt-crusted Catch of the Day. The Chef Glowig signature dish is prepared using local sea bass, zucchini and eggplant and tomatoes which are served as sides. The fish is prepared with a shell-like salt crust and shown to the guest, then taken back and bones cleaned out before being served to the guest.

Dolci – Dessert

The perfect end to every meal is a good dessert and Primavera’s dessert selection, though not huge, still has a lot to offer to satisfy all taste palates.

Bringing Italy to Bahrain, Chef Glowig and Chef Ferraioli have created desserts that originate from their hometowns, allowing the guests to enjoy the taste of Italy in every bite.

The Pastiera Napoletana con gelato di ricotta is the traditional cake from the city of Naples. Served with a homemade ricotta ice cream, the taste of candied lemon and oranges can be tasted in every spoonful. Though the cake is not spongy in texture, it is smooth and rich in flavour and tastes even better with the fresh ice cream.

The Torta Caprese con gelato di Vaniglia is a dessert served with homemade vanilla ice cream. Originating from the island of Capri, the dessert is named after the natives who are called “Caprese”. Similar to the idea of a brownie, the Italian dessert is flourless and contains almonds, but is light to eat. The almonds add a nice crunch to the delicate dessert along with the creamy vanilla ice cream which complements the warm dessert nicely.

The signature dessert of Chef Glowig, the indulgent Five Varieties of Chocolate, is ideal for chocolate lovers. The layered sweet is made using cake with sable sea salt, liquorice semifreddo, mousse chocolate, chocolate tuile and a chocolate plaque with silver leaf as garnish. The dessert looks almost like a work of art and tastes just as exquisite.

Also on the menu is Spuma di Caprino con Sorbetto di Yoghurt e Fragole. Made with homemade yoghurt ice cream, caprino cheese (Italian goat cheese), and strawberry coulis, a refreshing dessert ideal for the hot summers approaching. Topped with fresh strawberry chunks, the ice-cream like dish also has a sable sea salt biscuit in the centre adding a nice crisp in every spoonful. Primavera’s new menu boasts authentic fresh and homemade Italian dishes that truly encompasses the essence of Italy. The menu brings to the table a unique experience in every dish.
